Fish Taco Lettuce Wraps with Chili Lemon Marinade

Awesome weight loss friendly recipe that doesn't skimp on flavor. Eat this instead of a restaurant style fish taco. Your body will thank you for it!

Ingredients

  • 6 pieces Snapper you could use any delicious white fish that your heart desires or that you have on hand
  • 1 head Romaine Lettuce

FOR THE CHILI LEMON MARINADE

  • 2 Lemons juiced
  • 1 Tablespoon Olive Oil
  • 3 Cloves Garlic crushed
  • 2 Tablespoons Chili Powder
  • Salt and Pepper

FOR THE COLESLAW

  • 1 medium head Green Cabbage thinly sliced
  • 2 large Carrots grated or I just used a vegetable peeler to create long thin slices, then cut them up a bit
  • 4 Green Onions

FOR THE COLESLAW DRESSING

  • 2 Tablespoons Rice Vinegar
  • 1 Lemon juiced
  • 1 Tablespoon Dijon Mustard
  • 1 Tablespoon Honey
  • Salt and Pepper

Instructions

  1. Make the Chili Lemon Marinade. Mix all of the marinade ingredients into a large bowl. Place the white fish of your dreams into the bowl of marinade, and mix so the fish is completely covered in the marinade. Let sit while you prepare the rest of the meal. The flavor is stronger the longer you let it marinade.

  2. Prepare your coleslaw. Prepare the veggies and then make the dressing. Mix all the ingredients in the coleslaw dressing in a small bowl and drizzle over the veggies.
  3. Cook your fish! Dump the whole bowl of fish and marinade into a large stove top pan, and cook on medium heat until the fish starts to flake. Flip the fish over halfway through cooking.
  4. Put your Fish Taco Lettuce Wrap together. Take a leaf of Romaine Lettuce, fill it with the yummy tangy crunchy coleslaw, and top with small bite sized pieces of your Chili Lemon Fish.
