Awesome Veggie Soup for Weight Loss

Ingredients

  • 1 medium Onion Chopped
  • 4 Large Carrots Chopped
  • 4 stocks Celery Chopped
  • 4 cloves Garlic Crushed
  • 2 tablespoons Extra Virgin Olive Oil
  • 1 medium Zucchini Chopped
  • 10 large Mushrooms Chopped
  • 3 cups Cabbage Chopped
  • 1 796 ml Can of Diced Tomatoes With Juice
  • 1 398 ml Can of Diced Baby Corn Drained of Juice
  • 1 10.6 oz bag of frozen okra sliced rings or 2 cups fresh okra sliced
  • 2 cups Frozen Peas
  • 12 cups Chicken Broth or Veggie Stock
  • 3 Tablespoons Worcestershire Sauce
  • 4 Bay Leaves
  • 1-2 Limes Juiced
  • Salt and Pepper to Taste
  • 2 Chicken Breasts Chopped, (OPTIONAL)
  • Fresh Cilantro on top as Garnish (OPTIONAL)

Instructions

  1. In a large Soup pot put your olive oil, chopped onion, carrots, celery, and garlic, and on medium heat sauté until onions become translucent.

  2. Add your 12 cups of chicken broth to the pot and turn the heat up to max until it starts to boil. When it starts to boil the heat can be turned down to simmer.

  3. Add all the rest of the Veggies (Chopped zucchini, mushrooms, cabbage, can of diced tomatoes, can of baby corn, bag of frozen okra, frozen peas) and diced chicken (optional)  if you would like some extra protein in your soup.

  4. Add Seasonings (Worcestershire sauce, bay leaves, salt and pepper) and let simmer for about 2 hours.

  5. Add Lime juice when the soup has finished cooking.

  6. Serve it in a large bowl topped with cilantro and a squeeze of extra lime juice (if you love lime as much as I do).

  7. Step 7: Enjoy!!! And don't feel bad about having seconds!!
