Crustless Quiche is delicious, easy, and a great way to use up some leftover ham! You can eat it for dinner and it is delicious for breakfast the next morning! It’s light yet filling, and super customizable to your taste preference! It’s also INEXPENSIVE to make! AND saving money on food is a great way keep the expenses in check…
I have to tell you something… its bad! Our grocery spending is OUT OF CONTROL! I had a revelation recently that if I can work on cutting our grocery spending in half for the month, that would be equal to me working a part-time minimum paid job!! I can make spending less my JOB! And!! I can make healthy meals while do it!
The first step in my spending less revelation is eating less of the most expensive foods! MEAT!
If it was up to me, I would go meatless a majority of the time; however, I have a meat loving hubby and son, who would probably starve if there wasn’t meat on the table, so making the meat that we eat stretch, is my top GOAL! For now! So… crustless quiche it is! (wink)
CRUSTLESS QUICHE: AN EASY LEFTOVER HAM RECIPE
INGREDIENTS NEEDED FOR CRUSTLESS QUICHE RECIPE
- Leftover Ham
- 1/4 Onion
- 4 Mushrooms
- 2 Tablespoons Feta Cheese
- 4 Whole Eggs
- 2 cups Egg Whites
- 1/4 cup Milk (I use Skim Milk)
- 1 teaspoon Olive Oil
- Salt and Pepper
- Cooking Spray
OPTIONAL INGREDIENTS:
- Spinach
- Green Onions
- Tomatoes
- Peppers
- Cubed Potatoes
- Cheddar Cheese
- Spices
METHOD TO MAKE THE CRUSTLESS QUICHE RECIPE
Step 1: Sauté your ham and vegetables in the oil in a frying pan, for a few minutes, just to give them a head start in the cooking process. Then add them to a greased pie plate.
Step 2: Mix the wet ingredients together. 2 whole eggs, egg whites and milk, and pour over the ham and veggies!
Step 3: Sprinkle on some feta cheese, salt, and pepper.
Step 4: Bake in oven at 400 degrees until cooked through. About 40-45 minutes. Just make sure the center of the quiche is firm, and not wet looking.
Step 5: Serve! AND EAT IT!!
I have to tell you… I usually top my eggs with a couple dollops of salsa, but this quiche is so tasty it doesn’t need it at all! This is an awesome light dinner idea, and great way to use up some leftovers (or to stretch the meat in your meals a little further)! Skip the mushrooms. Maybe add some red peppers instead. Yum yum!

Making the most of leftovers to save money in the monthly budget is an excellent idea. I can easily go without meat and prefer to but the hubby, not so much. This quiche looks super easy to make, I will definitely give it a try.

This dish looks incredible and I love how simple these ingredients are. You can never go wrong with making a quiche for lunch or breakfast. I am sure I am not the only one that thinks feta cheese on quiche is essential.
