Look at this weight loss meal!! It was delicious, and so healthy. I call it my Chicken, Leek, and Asparagus on Roasted Cauliflower Recipe.. Lol because that’s what it is. It’s super filling and so easy to whip up! So… I’d love to share my little recipe with you, so you can enjoy the health and weight loss benefits too!
So… I have a little confession! I fell off the weight loss wagon!! I know… I know! AGAIN!! I was feeling so good and fitting into all my old clothes then HALLOWEEN happened!!! Sugar is a huge addiction people! But I’m BACK! And I’m going through sugar withdrawals and it sucks, but I’m doing it, and I won’t cheat again till I’m at the weight I feel comfortable at again. Make sure I keep my word! LOL…
I have talked a little bit about it before but the diet, No…lifestyle that I follow is called “The 17 day Diet“. This is the first method of eating that really works for me (and believe me a have tried a few!), I don’t feel deprived, and I feel awesome sticking to this weight loss meal plan. I highly recommend looking into it if you want to drop some weight, and/or relearn how to eat a healthy clean diet. You can check out a quick list of the foods that you are allowed to eat here if you are interested! I am in no way getting paid to talk about the 17 day diet. I just love it… I find that I lose weight fast, love all the foods I can eat, and find that this diet incorporates a lot of the healthy ways to lose weight. So it’s a win win in my books! It’s awesome!
Anyways, here is my Chicken, Leek, and Asparagus on Roasted Cauliflower Recipe that I made up using a few of the foods that are allowed on cycle 1 of the 17 day diet. If you are following this diet, or just looking for yummy weight loss meals, to add to your list of go to recipes, then this one is a good one! And it’s super easy to make! And leftovers are just as yummy the next day for lunch!
INGREDIENTS FOR CHICKEN, LEEK, AND ASPARAGUS ON ROASTED CAULIFLOWER RECIPE
- Chicken breast (I made 4 – one for me, one for my husband, one for the 2 small kiddos to share, and one for my lunch the next day!)
- 2 Leeks
- 1 bunch of Asparagus
- 1 teaspoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- The juice of one large juicy Lemon
- Salt and pepper
For the Roasted Cauliflower:
- 1 head of Cauliflower
- 1 Tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- salt and pepper
METHOD TO MAKE CHICKEN, LEEK, AND ASPARAGUS
Step 1: Put a teaspoon of olive oil in a large stove top pan, add chicken, and cook on medium heat till it the chicken is almost cooked though.
Step 2: Cut up leeks, clean leeks by letting them sit in a large blow full of water. separate the rings because dirt can hind between the layers. Rinse and add to the pan of chicken.
Step 3: Add whole bunch of asparagus to the pan as well.
Step 4: Add all the spices and the juice of one large juicy lemon to the pan. Stir it all up, and cover with a lid. Cook on medium heat till the asparagus is cooked but still has a bit of a crunch to it. (At least that’s how I like my asparagus cooked).
Step 5: Make sure chicken is cooked all the way through, and you are done that part of the recipe!
METHOD TO MAKE ROASTED CAULIFLOWER
Step 1: Pre heat oven to 400 degrees.
Step 2: Wash and cut up cauliflower into bite sized pieces.
Step 3: Place cauliflower on a tinfoil lined backing pan, and drizzle with olive oil.
Step 4: Sprinkle spices on the cauliflower.
Step 5: Place in the middle of the oven for about 30 minutes. stirring them every 10 minutes to make sure they are crisp on all sides… and don’t stick to the pan and burn!
DONE the Chicken, Leek, and Asparagus mixture!
PLATE YOUR CHICKEN, LEEK, AND ASPARAGUS ON ROASTED CAULIFLOWER
Now just plate the roasted cauliflower and top with your Chicken, Leek, and Asparagus mixture! And EAT IT! MMMmmmmmmmm. Just look at it!!!!! I wish I had some more right now!
I dipped my Chicken, Leek, and Asparagus on Roasted Cauliflower in a bit of Sriracha sauce! So Yum!

Heathy weight loss meal with lots of flavor. Paleo, 17 day diet.
Ingredients
