Haha… As you can maybe tell from the title of this recipe it didn’t turn out like we had planned. Corbin has asked me for a few days now to make pancakes, but because I’m on a paleo type diet (which means no flour) I wasn’t feeling strong enough to have real pancakes in the house. So we went on Pinterest and looked up a healthy paleo pancake recipe and Corbin was excited to try it. We found this recipe called 3 ingredient pancakes by Recipe By Photo. All the recipe calls for is bananas, eggs and cinnamon (and no flour!!). YUMMMM. Sounds easy enough. Right?!?! Corbin really wanted to add chocolate chips and sprinkles and so we went for it. Here’s our recipe for super yummy chocolate banana pancake scramble!
Ingredients for the Chocolate Banana Pancake Scramble!
- 2 Bananas
- 4 Eggs
- 1 Tablespoon Cinnamon
- 1 Handful Chocolate Chips
- Some Blue Sprinkles!!
Method to make the Chocolate Banana Pancake Scramble
Step 1: Put Bananas into a bowl and mash.
Step 2: Crack eggs into the same bowl. Don’t get any shells in there… Corbin is awesome at cracking eggs! So proud of him. He loves cracking eggs so much that there has been a handful of times that I have come into the kitchen to find him cracking eggs into a bowl on the floor… he very rarely gets shells in the eggs, however, every time he does this I have to make the eggs and he never wants to eat them!!! He just loves cracking them… The fridge now has a lock on it.
Step 3: Add cinnamon and chocolate chips. Mix well with a whisk!
Step 4: If you are 3 years old get your mom to cook your creation on the stove. If you are old enough to safely use the stove cook away!
So…. we had some issues at this step. First we tried to make pancakes but they didn’t look very blog friendly (very ugly floppy things). Then we tried to pour the batter into the shape of the letter C for Corbin and I for Ivy, but that didn’t work out either (the batter was too runny). So then I tasted the scrapings from our mistakes and discovered that cooking them like you would scrambled eggs was super delicious! And the texture was way better than that of our ugly pancakes! So that’s what we decided to create. Chocolate Banana Pancake Scramble!!

And this is our creation!! Still not very pretty but soooo delicious. It tastes like chocolate banana bread but without any flour. And essentially it’s Chocolate Banana Scrambled Eggs! Weird I know, but so yummy! It’s a healthier version of a yummy treat! Minus the chocolate chips, this would be a very healthy treat or even an awesome breakfast! Super quick and easy too! I was thinking that it would probably be great as a type of sweet quiche. If that’s a thing. In other words this dish is very surprisingly delicious!
And Corbin approved!!! Especially now that he added the finishing touch of Blue Sprinkles! Because who doesn’t love sprinkles on everything!?!? Perfect and blog photo ready! haha… Thanks Toots!
I love that Corbin is my little helper in the kitchen! We only really get to collaborate in the kitchen like this when Miss Ivy Lynn is napping, because when she is awake she pretty much lives on the kitchen counter and controls the kitchen, and both kids in the kitchen is not all that of a productive thing. Hopefully soon family cooking can happen without it ending in injuries! (eye roll)
