So… I have conflicting feelings about posting about this delicious weight loss friendly meal. I am so sad that the photos of it just SUCK! But it is just to tasty of a meal to not post about. So, here you have it… My Delicious Mushroom, Leek, and Chicken Thigh recipe, that tastes a lot better than it looks. LOL. I hope you take a chance on this one because it really is worth it! (wink)
DELICIOUS MUSHROOM, LEEK, AND CHICKEN THIGH RECIPE
INGREDIENTS FOR MUSHROOM, LEEK, AND CHICKEN THIGH RECIPE
- 12 Boneless Skinless Chicken Thighs (this is our 4 servings, I think one adult eats about 3 chicken thighs, but adjust to your preference)
- 12 Mushrooms
- 2 Leeks
- 1 pack of Chicken OXO
- 1 teaspoon Thyme
- 3 Tablespoons Honey Dijon Mustard (I use Presidents Choice Honey Dijon, the seedy grainy kind.)
- Salt and Pepper
METHOD TO MAKE MUSHROOM, LEEK, AND CHICKEN THIGH RECIPE
Step 1: Add your olive oil and chicken thighs to a deep dish pan, and cook on your stove top on medium heat, until the chicken is almost cooked through.
Step 2: As the chicken is cooking prepare your veggies.
- To prepare Leeks, chop the top and bottom off about 1 inch, and then slice the whole Leek into small rounds. Clean by it placing sliced Leeks into a bowl of water, and separate all the layers of the Leeks. The dirt likes to hide in-between the layers, and it will sink to the bottom of the bowl. Then rinse and add your sliced clean Leeks to your cooking Chicken Thighs.
- Slice Mushrooms and add them to your Chicken Thighs as well.
Step 3: Add all other ingredients to the chicken and veggies. Let it cook on the stove until the Leeks have reduced, and chicken is completely cooked through.
Step 4: Serve!! and EAT IT!! So yummy!!

So.. I’m sorry that the photos don’t give this Mushroom, Leek, and Chicken Thigh recipe justice! But I had to post about it, because it is so easy to make, doesn’t use many ingredients, is weight loss friendly, and f***ing tasty!! I’ll update the photos the next time I make this meal! Promise!
I hope this meal inspires you to find low-calorie ingredients in your kitchen to make a super tasty weight loss meal. To beef this meal up, I made rice on the side. Shawnikins and the kiddos topped their rice with the Mushroom, Leek and Chicken Thigh goodness. I had no rice with Asparagus on the side. Love that Asparagus! If you are wondering I just squirt a little lemon on my asparagus, sprinkle on some pepper, and they are super yum!
