Stick a turkey carcass in a pot of water and BAM!! You get delicious Turkey Soup! Well, add a few more steps in there, but DAMB… Boiling up those bones makes an awesome tasting soup! So next time you have left over turkey bones from one of your big family dinners… Keep the bones!!! You wont be disappointed with this delicious Turkey Soup Recipe!
While researching Turkey Soup Recipes, I noticed their are lots of different methods to using the turkey carcass to make turkey soup. But I’m bringing you the easiest way that works for me, and I end up with 2 big pots of soup (that can be frozen in individual portions for later), that I tailor to the tastes of different family members… AKA, The kids vs. the adults! Especially if you are working with a 20lb plus bird… that sucker may be too big for one pot. Just grab a hold of that Turkey Carcass (love that word CARCASS) and rip it in half. Put a half in each pot, fill with H2O, and boil away!
This recipe has the same basic base and then you can add different ingredients to satisfy your family preferences. So much YUMMMM!!
TURKEY SOUP RECIPE
INGREDIENTS:
- Turkey Carcass
- Turkey Removed from Carcass
- 10 cups Water
- 2 Tablespoons Olive Oil
- 4 large Carrots
- 4 Stocks Celery
- 1 large Onion
- 4 cloves Garlic
- 2 cups Frozen Peas
- 3 Bay Leaves
- 4 packets of Chicken OXO
- 1/4 cup Dried Parsley
- 1 Tablespoon Thyme
- 1/4 cup Worcestershire Sauce
- Salt and Pepper to Taste
OPTIONAL INGREDIENTS:
- Noodles
- Brussel Sprouts
- 1 teaspoon Chili Pepper Flakes
METHOD TO MAKE TURKEY SOUP FROM A CARCASS
Step 1: Remove all turkey meat from the Turkey carcass, rip into small bight sized pieces and set aside.
Step 2: Place Turkey Carcass into a large pot. (You can rip a large turkey carcass in half, and put each half in separate large pots to make more soup!!)
Step 3: Fill each pot with water so that it covers all of the bones, or fill to about 2 inches from the top of the pot.
Step 4: Let boil for at least an hour.
Step 5: Strain broth into a large bowl through a colander to remove bones, and set aside.
Step 6: Sauté onions, carrots, celery, and garlic, in olive oil, in your soup pot, until the onions start to turn translucent.
Step 7: Add your turkey bone broth, and ripped up turkey pieces, back to the soup pot.
Step 8: Add seasonings, bay leaves, Worcestershire sauce, Chicken OXO, thyme, parsley, salt and pepper.
Step 9: Add frozen peas.
Step 10: Bring soup to a boil, then turn the temp down, and let simmer for 1 more hour.
Step 11: About 15 minutes before the soup is done, add special ingredients that you or your family loves in their soup.
For Example: The adults in this house love Brussel sprouts. You could add left over precooked Brussel sprouts, or a bag of frozen baby Brussel sprouts as I did in this recipe… we didn’t have any left over… I may have ate all those suckers the night before. I also added some dried chili flakes and hot sauce.
For the Kiddos: My kiddos love noodles in their soup. Just precook about a cup of what ever style noodles the kiddos like and then add them to the soup at the end. You can also cook the noodles right in the soup, but they will absorb a lot of the liquid in the soup. the soup will be more like a stew!
Step 12: ENJOY!
As I was photographing the kids soup, Corbin threw this in the soup!… Lol. It was the prize from his Christmas cracker from the night before, and I thought it looked like it was supposed to be swimming there. Lol! Yumm, squid soup!

I love a good chicken noodle soup! Using leftover turkey is just genius. There is always leftovers that I’m not sure what to do with. The broth looks so warm and yummy and the recipe looks pretty easy. win!

The Turkey noodle soup might be more of your jam! lol… i know brussel sprouts are an either you love em or hate em food. Just don’t put them in.
