Yummers! The easiest, yummiest, bestest, Oh and did I mention most delicious Scalloped Potatoes in da HOOOOUUUSEE!!
I grew up eating this delicious side dish every time we had ham for dinner, so it reminds me of my Mom every time I make them. It’s her delicious scalloped potato recipe. I can remember sitting at the table in the kitchen pealing and then slicing the potatoes and onions, as she made the rest of the dinner. That was how we worked. She cooked, I chopped!
Now a days, I have a wonderful mandoline slicer to quickly slice up my potatoes and onions for me. It’s the best invention to get perfectly sliced veggies in a fraction of the time. Although I have to admit, I miss sitting in the kitchen with my mom slicing up the veggies with a knife, while listening to music, and making the kitchen our dance floor. I miss her so much… those kitchen memories are special to me. I hope that I can soon make those same memories with my own kiddos… when they are old enough to trust with a knife that is.

Step 3. Peal and thinly slice your potatoes and onions. A mandoline slicer is very handy for this step, but no problem if you don’t have one, the old’n day knife works just as well.
Step 4: In a greased casserole dish, layer half of your sliced potatoes, and then half of the sliced onions. Then pour half of the white sauce on top.
Step 5: Repeat these layers one more time… second half of sliced potatoes… second half of sliced onions… and pour on the last of the white sauce. Like this…
Step 6: I add a little more pepper because I’m a pepper monster! Like this…
Step 7: Cover with tinfoil and bake in the oven for 1 hour. After an hour remove the tinfoil, and bake for another 30 mins uncovered.

I made these for Thanksgiving dinner and yummy! Huge hit all around. I loved how simple this recipe was. They were super yummy but also not overly heavy. I will definitely make again.
