Delicious Veggie Pie that will make you love to eat your veggies!! It makes the house smell wonderful as it is cooking!! And your guests will also love this light vegetable side dish, but beware… they will ask for the recipe!!
I know what you are thinking! “Jenna… How can Veggie Pie be that Delicious!” Well… Just let me tell you about my Mom’s Delicious Veggie Pie Recipe! Growing up this was a staple meal in our house. I think it was the only way us kiddos would eat our veggies and we didn’t just eat them, we would eat the whole pie! I remember sneaking into the kitchen and stealing bits off of the pie before and after dinner and we would even lick all the pie juices from our plates. It is just that Yummy! I believe she even entered her Veggie Pie into a contest and won!! However, I can’t ask her about this as she passed away almost 9 years ago now. I miss her a whole lot… but when I cook her recipes it brings me back to a time when we were together. She was an amazing cook and her recipes have lived on in me and in this way she is still a big part of my life. If only I could throw things together as well as she did! Growing up I did learn a lot from her in the kitchen. I would sit at the table and she would hand me everything for chopping, as she cooked, mixed, and made everything delicious. I’m looking forward to cooking with my own kiddos in this way as they grow up.
Anyway, I have slightly changed her method of making this Veggie Pie to make it a lot simpler. She always made this pie with a crust but I have eliminated that part and made it a crustless pie! I did this because I simply never learned how to make the crust, and to tell you the truth the best part is the veggies, so why not just make the best part?!?! Right?!?!
I make this Veggie Pie as a side dish to rice and usually some lemon salmon, or yummy chicken. If there is left overs which most of the time there isn’t I will eat this pie for breakfast, lunch, and dinner the next day. The only way this is possible is if I make a double batch in a large casserole dish. You can make the delicious Veggie Pie in any shape dish that you own. I’ll be making it in a pie shape as that is what I grew up knowing.
Ingredients:
- 3 heads of Broccoli
- 1 medium Onion
- 2 cups shredded Cheddar Cheese
- 4 large Tomatoes
- 1/2 cup Mayonnaise
- 1 Teaspoon Oregano
- Salt and Pepper
Instructions:
Step 1: Preheat oven to 425°F.
Step 2: Prepare The broccoli and other veggies. Chop the Broccoli into bite sized chunks. The stem of the broccoli can also be used by cutting it into slices. I place the broccoli in a pot of boiling water to cook a bit (5-10 minutes) as I cut the other veggies. I do this because the broccoli takes a bit longer to cook than the onions and tomatoes. By precooking it a bit it makes the whole pie the same consistency. As the broccoli is cooking chop the onions into small chunks and the tomatoes into 1/4 inch slices.
Step 3: Grate the cheese! Sneak a couple bites of grated cheese!! Why is grated cheese so much better than sliced?!?!
Step 4: Drain broccoli water and place broccoli into pie plate.
Step 5: Layer the other ingredients: layers of the Veggie Pie are as follows from the bottom up.
BROCCOLI
DICED ONIONS
SHREDDED CHEDDAR CHEESE
SLICED TOMATOES
MAYONNAISE
OREGANO/SALT & PEPPER
Step 6: Cook in oven for 40 minutes. Until the top of the pie is slightly browned.
Step 7: Remove from oven and let sit for about 5 minutes before cutting.
Step 8: ENJOY!!!
Step 9: Eat the whole freaken Veggie Pie!

I’ve been a vegetarian for 11 years and vegan-ish for almost a year after I developed a severe lactose intolerance. This looks so delicious — I’m sure I could swap the cheese out for vegan cheese and it would be just as good.
