Quick And Easy Weight loss meals are totally attainable! If you find cooking weight loss meals to be a daunting experience you should totally try making sheet pan meals! They are AWESOME! Not until recently did I know that sheet pan meals was a thing! I mean I cook sheet pan meals all the time, I just didn’t know they had a name! Mind blown! You can look up “sheet pan meals” on Pinterest and thousands of quick and healthy meals will appear! It’s awesome! Sheet pan meals are actually my super secret successful way to cook my weight loss meals! All you do is throw some meat and veggies on a sheet pan with a little olive oil and spices and BAM! Healthy meals for days! I make enough for at least dinner and the next days lunch so that I don’t have to worry about coming up with a healthy meal for each meal of the day! This yummy Baked Tomato Chicken Recipe is on my list of easy delicious weight loss sheet pan meals. I LOVE my baked tomatoes! You could actually make this dish completely covered in tomatoes and it would be divine! It’s time to love cooking easy peasy weight loss recipes!
SHEET PAN BAKED TOMATO CHICKEN RECIPE
INGREDIENTS FOR SHEET PAN BAKED TOMATO CHICKEN RECIPE
- 4 Chicken Breasts
- 2 large Tomatoes
- Mayonnaise
- 1 head of Cauliflower or 1 bag pre chopped Cauliflower from Costco
- 1/2 large Sweet Onion
- 2 Tablespoons Olive Oil
- 1 teaspoon Garlic Powder
- 1 teaspoon Onion Powder
- 1/2 teaspoon Oregano
- Salt and Pepper to taste
METHOD TO MAKE SHEET PAN BAKED TOMATO CHICKEN
Step 1: Pre heat oven to 450 degrees.
Step 2: Cover your pan in tin foil.
Step 3: Place chopped cauliflower and chopped onions on your tin foil lined pan.
Step 4: Place you chicken breasts on your pan making sure that the chicken is resting on the pan not on top of the cauliflower.
Step 5: Drizzle with olive oil, and sprinkle on garlic powder and onion powder.
Step 6: Place sliced tomatoes on top of your chicken breasts. If you want you could layer the tomatoes covering the cauliflower as well! As they are the best part!
Step 7: Spread mayonnaise all over the tomatoes!!! YUMM!
Step 8: Sprinkle the whole sheet pan meal with oregano, salt and pepper!
Step 9: Put it in the oven for 40 minutes. Or until the chicken is cooked through!
Step 10: Serve and ENJOY!!
If you love cooked tomatoes, you will love this recipe! I came up with this recipe because I was craving my Mom’s Delicious Veggie Pie, but didn’t want to eat the cheese included in her recipe (still on that weight loss train). I also wanted to add some meat to the dish, so I whipped this up and it turned out super tasty!
I have been loving sheet pan recipes on my weight loss journey. I find them quick to prepare, easy to cook, a great way to cook meat and veggies at the same time, and makes enough food for dinner, as well as Shawnikins and I’s lunch the next day! All wins in my book! It’s also easy to just make some rice on the side for the members of the family who feel they need more than just meat and veggies in their diet! (wink)
