Who’s on the no sugar train with me?!?! If you struggle to stay sugar free ALL THE TIME… These cookies are just the thing to satisfy your cookie craving, when you just NEEEED a cookie! LOL. Happens to all of us at one time or another! So to help me survive the weight loss journey I made these Sugar Free Chocolate Chip Cookies! They are not completely Carb Free, but I did use coconut flour instead of regular wheat flour, and although they don’t have the same texture as a regular chocolate chip cookie, they sure are tasty. They are pretty much a coconut chocolate chip cookie with a cakey texture! Super yummm! And Kid approved, for those of you trying to reduce the sugar intake of your kiddos! It’s a win win cookie thing!
Sugar Free Chocolate Chip Cookie Recipe!
INGREDIENTS:
- 1/3 cup Coconut Flour
- 2 Eggs
- 1/4 cup Coconut Oil (melted to a little warmer than room temp)
- 1 teaspoon Vanilla Extract
- 2 teaspoons Erythritol Natural Sweetener
- 1/3 cup Sugar Free Chocolate Chips (I used Lily’s Dark Chocolate Chips)
- Pinch of Salt
METHOD:
Step 1: Pre heat oven to 350 degrees., and mix all ingredients into a medium sized bowl.
Step 2: Let the dough sit for about 10 minutes to let the almond flour absorb the liquids and do its thing.
Step 3: Roll dough in the palms of your hand into small balls, and place on a pan lined with parchment paper. Press them down with a fork.
NOTE: These cookies will not change shape. So the shape of the cookies that you put in the oven is the shape of the cookies that will come out of the oven! You could really shape them anyway you want!

Step 4: Place on the middle rack of your oven, and bake for about 12 minutes! Or until the edges start to get a golden brown colour!
Step 5: Let them cool and then EAT THEM!

What is Erythritol? I have not heard of it before and I am curious. I keep seeing all these awesome food blogs talk about using coconut flour, but I don’t know much about it. Does it have a differnet texture than regular flour? I loved the pictures, especially the ones with your son. 🙂

https://www.medicalnewstoday.com/articles/318392.php. Its pretty much a sugar substitute called a sugar alcohol. It is used in lots of “Sugarfree” foods. I bought it in the bulk containers at Bulk Barn.
YES! coconut flour has a different texture for sure! I would describe it as a dense cake, that tastes like coconut. When using it you can not just substitute it into a recipe that lists regular wheat flour. You need much less coconut flour when cooking with it. You can find it also at the Bulk Barn so you can buy a little and try cooking with it to make sure you like it before buying a whole bag.
