I just discovered the most yummy easy diet friendly marinade for chicken! I have been using it on most of my chicken meals lately because it’s just that yummy! Plus it makes the vegetables that are cooked with the chicken and it’s marinade, super yummy too!! The finger licken good marinade is… Garlic Lime marinade! So simple, yet sooo yummy! And for some reason my chicken has been a lot more moist lately too. Maybe it’s the marinade?!?!? For this recipe I’ll be using my Garlic Lime marinade to make the most delicious chicken fajita salad. This is a go to meal for my family when I’m on a diet. The rest of the family just wraps the fajitas up in a wrap. Some times I also wrap it up, but I opt for a lettuce wrap, or other times I just make an awesome salad out of it! Check it out!
CHICKEN FAJITA SALAD WITH GARLIC LIME MARINADE RECIPE
INGREDIENTS NEEDED FOR CHICKEN FAJITA SALAD WITH GARLIC LIME MARINADE
FOR THE CHICKEN AND VEGGIES
- 4 Chicken Breasts
- 3 Bell Peppers (I use 1 red, 1 orange, and 1 yellow pepper)
- 1 medium Onion
- Handful of Green Beans
- 2 heads of Romaine Lettuce Hearts
- 1 Tablespoon olive oil
- 1 Lime (for garnish)
- A Dollop of Salsa
- A Dollop of 0% Plain Greek Yogurt
FOR THE GARLIC LIME MARINADE
- Juice from 2 Limes
- 4 cloves of Garlic crushed
- 1 Tablespoon olive oil
- 1 Tablespoon Dried Basel
- Salt and Pepper
METHOD TO MAKE CHICKEN FAJITA SALAD WITH GARLIC LIME MARINADE
Step 1: Pre heat your oven to 425 degrees.
Step 2: Make the Garlic Lime marinade. Mix all the ingredients for the Garlic Lime marinade listed in the ingredients in a large bowl.
Step 3: Slice your chicken breasts into strips, and mix into the Garlic Lime marinade. The flavor is more intense if you let it actually marinade for at least a couple of hours… but often I don’t have time for that, so it just gets to marinade in the time that it takes me to prep the veggies.
Step 4: Prep the Veggies. On a tin foil lined baking pan, place your sliced peppers, onions, and green beans.
Step 5: Drizzle with 1 tablespoon of olive oil and sprinkle on salt and pepper. (You could omit this step to cut the oil in the recipe. The oil in the marinade is enough to keep the veggies from sticking to the foil).
Step 6: Layer your chicken with all its garlic lime marinade on top of your veggies.
Step 7: Place in oven for 30 minutes or until chicken is cooked through.
Step 8: Prepare your lettuce, by ripping it up and washing it.
Step 9: Plate your meal. Layer your lettuce, fajita mixture, dollop of salsa, and a dollop of 0% Plain Greek Yogurt! Plain Greek yogurt is awesome as a sour cream substitute. On the 17 day diet I am allowed 2 servings of yogurt (or probiotics) a day!
I just squeeze a bit more lime on top and mow down!!! Yummmmm!
