Yay! Another super healthy yummy recipe to add to your list of tasty weight loss recipes! Fish Tacos are something that my Shawnikins and I love to order when we are lucky enough to sneak away for a dinner date! They are a wonderful hand held, crunchy, tasty meal that really never fails to impress us. A little taco, a little coleslaw, and super yummy fish, topped with a delicious sauce! MMmmmmm. You can have one as a light snack or 3 to make it a meal. Fish tacos are pretty much life except… they are not on my current diet plan!! Womp Wooommm (sad face). So…my Fish Taco Lettuce Wrap Recipe to the rescue!! I subbed out the taco shell for a nice crisp piece of lettuce, made a healthy dressing for the coleslaw, and made a delicious healthy Chilli Lime Marinade for the fish. They turned out scrumptious!! They filled my fish taco craving without all the extra calories! And I’m still on track with my weight loss goals! High five to that!
HOW TO MAKE MY FISH TACO LETTUCE WRAP RECIPE
INGREDIENTS FOR FISH TACO LETTUCE WRAP RECIPE
NOTE: Makes about 9 large Fish Taco Lettuce Wraps
- 6 pieces of Snapper ( you could use any delicious white fish that your heart desires or that you have on hand)
- 1 head of Romaine Lettuce
FOR THE CHILI LEMON MARINADE
- 2 Lemons juiced
- 1 Table spoon Olive Oil
- 3 Cloves of Garlic crushed
- 2 tablespoons Chili Powder
- Salt and Pepper
FOR THE COLESLAW
- 1 medium head of Green Cabbage thinly sliced
- 2 large Carrots grated or I just used a vegetable peeler to create long thin slices, then cut them up a bit
- 4 Green Onions
FOR THE COLESLAW DRESSING
- 2 Tablespoons Rice Vinegar
- 1 Lemon juiced
- 1 Tablespoon Dijon Mustard
- 1 Tablespoon Honey
- Salt and Pepper
METHOD TO MAKE FISH TACO LETTUCE WRAP RECIPE
Step 1: Make the Chili Lemon Marinade. Mix all the marinade ingredients into a large bowl. Place the white fish of your dreams into the bowl of marinade, and mix so the fish is completely covered in the marinade. Let sit while you prepare the rest of the meal. The flavor is stronger the longer you let it marinade, but I never remember to marinade anything that far in advance.
Step 2: Prepare your coleslaw. Prepare the veggies and then make the dressing. Mix all the ingredients in the coleslaw dressing in a small bowl and drizzle over the veggies.
Step 3: Cook your fish! Dump the whole bowl of fish and marinade into a large stove top pan, and cook on medium heat until the fish starts to flake. Flip the fish over halfway through cooking.
Step 4: Put your Fish Taco Lettuce Wrap together. Take a leaf of Romaine Lettuce, fill it with the yummy tangy crunchy coleslaw, and top with small bite sized pieces of your Chili Lemon Fish. I added a side of asparagus because my appetite is out of control, and I need to fill myself with a lot of vegetables to feel satisfied. Other wise, I could probably eat 10 Fish Taco Lettuce Wraps.

Fish Taco Lettuce Wraps with Chili Lemon Marinade
Awesome weight loss friendly recipe that doesn't skimp on flavor. Eat this instead of a restaurant style fish taco. Your body will thank you for it!

Okay I have to admit I’ve never been a huge fish taco fan… I just can’t ever get into the flavours of the taco and the fish together… but THIS is awesome… I could totally do fish on lettuce! Brilliant!!
