Mom's Delicious Veggie Pie

Ingredients

  • 3 heads Broccoli chopped in chunks
  • 1 medium Onion diced
  • 2 cups Cheddar Cheese shredded
  • 4 large Tomatoes sliced
  • 1/2 cup Mayonnaise
  • 1 Teaspoon Oregano
  • Salt and Pepper

Instructions

  1. Preheat oven to 425°F.

  2. Prepare The broccoli and other veggies. Chop the Broccoli into bite sized chunks. The stem of the broccoli can also be used by cutting it into slices. I place the broccoli in a pot of boiling water to cook a bit (5-10 minutes) as I cut the other veggies. I do this because the broccoli takes a bit longer to cook than the onions and tomatoes. By precooking it a bit it makes the whole pie the same consistency. As the broccoli is cooking chop the onions into small chunks and the tomatoes into 1/4 inch slices.

  3. Grate the cheese!

  4. Drain broccoli water and place broccoli into pie plate.

  5. Layer the other ingredients: Layers of the Veggie Pie are as follows from the bottom up.

     Broccoli, Onions, Cheese, Tomatoes, Mayonnaise, Oregano, Salt & Pepper.

  6. Cook in oven for 40 minutes. Until the top of the pie is slightly browned.

  7. Remove from oven and let sit for about 5 minutes before cutting.
