Leftover Turkey Carcass Soup Recipe

Ingredients

  • Turkey Carcass
  • Turkey Removed from Carcass
  • 10 cups Water
  • 2 Tablespoons Olive Oil
  • 4 large Carrots
  • 4 Stocks Celery
  • 1 large Onion
  • 4 cloves Garlic
  • 2 cups Frozen Peas
  • 3 Bay Leaves
  • 4 packets of Chicken OXO
  • 1/4 cup Dried Parsley
  • 1 Tablespoon Thyme
  • 1/4 cup Worcestershire Sauce
  • Salt and Pepper to Taste

OPTIONAL INGREDIENTS:

  • Noodles
  • Brussel Sprouts
  • 1 teaspoon Chili Pepper Flakes

Instructions

  1. Remove all turkey meat from the Turkey carcass, rip into small bight sized pieces and set aside
  2. Place Turkey Carcass into a large pot. (You can rip a large turkey carcass in half, and put each half in separate large pots to make more soup!!)

  3. Fill each pot with water so that it covers all of the bones, or fill to about 2 inches from the top of the pot.

  4. Let boil for at least an hour.

  5. Strain broth into a large bowl through a colander to remove bones, and set aside.

  6. Sauté onions, carrots, celery, and garlic, in olive oil, in your soup pot, until the onions start to turn translucent.

  7. Add your turkey bone broth, and ripped up turkey pieces, back to the soup pot.

  8. Add seasonings, bay leaves, Worcestershire sauce, Chicken OXO, thyme, parsley, salt and pepper.

  9. Add frozen peas.

  10. Bring soup to a boil, then turn the temp down, and let simmer for 1 more hour.

  11. About 15 minutes before the soup is done, add special ingredients that you or your family loves in their soup.

  12. ENJOY!
