Saucy Nifty Carrots

Ingredients

  • 10 Carrots peeled and sliced

Sauce

  • 3/4 Cup Reserved Carrot Water
  • 3/4 Cup Mayonnaise
  • 3/4 Cup Sour Cream
  • 1/2 Cup Onion Finely Chopped
  • 3 Tablespoons Horseradish
  • Salt and Pepper to taste

Toping

  • 1 Cup Breadcrumbs
  • 3 Tablespoons Butter melted

Instructions

  1. Preheat oven to 375 degrees.

  2. Peel and slice Carrots, and cook in a pot of water until tender crisp. (NOTE: Before draining water from carrots remember to save 3/4 cup of hot carrot water for your Sauce)

  3. Place drained cook carrots in a casserole dish

  4. Mix all sauce ingredients together and pour over the carrots.

  5. mix melted butter and breadcrumbs together and sprinkle over saucy carrots

  6. Bake for 30 minutes. DONE!
