This soup Veggie Soup is super yummy. When I’m trying to lose weight this is my go to soup because it freezes great and I never get sick of it. I usually just throw everything in my soup pot without knowing how much of each ingredient I add, but I will take you step by step so that you can make this soup and feel great eating it too.
Recently I decided that enough was enough with my weight going up and down for years. I needed to take the time to find healthy meals that I love so that I can lose weight, sustain the weight loss, and not feel deprived. I’ll be sharing some more of my favorite recipes in future posts, so stay tuned for those. I truly believe that finding ways to eat as much vegetables as possible (that you love), avoiding processed sugars, and breads (and related products) is the way to reduce weight and maintain weight loss. This is just what works for me. I think I have finally found a lifestyle with food that works for me and I’d love to share it with you. You know only a few months ago I ate all the chocolate Easter bunnies and I craved sugar all the time. Especially right before bed. But now that I have been eating mostly veggies and lean animal proteins for the last 3 months, I no longer have those cravings, my portions sizes are down, and I feel so much better. In addition I have lost 23 lbs. Not to bad! And it has not been hard at all!! Let me know if you have any more questions about what I have been eating and I’ll make sure to post more meal ideas soon.
Anyways, onto the Awesome Weight Loss Veggie Soup!!
Recipe Ingredients:
- 1 medium onion chopped
- 4 large carrots or a few handfuls of chopped baby carrots
- 4 stocks of celery chopped
- 4 cloves of garlic crushed
- 2 tablespoons Extra Virgin Olive Oil
- 1 medium zucchini chopped
- 10 large mushrooms chopped
- 3 cups cabbage chopped
- 1 796 ml can of diced tomatoes with juice
- 1 398 ml can diced baby corn drained of juice
- 1 10.6 oz bag of frozen okra sliced rings or 2 cups of fresh okra sliced
- 2 cups frozen peas
- 12 cups of chicken stock (you could use veggie stock as well)
- 3 tablespoons Worcestershire sauce
- 4 Bay leaves
- 1-2 juice of limes depending on how much you like lime (I like it a lot)
- Salt and pepper to taste
- 2 chicken breasts cubed (optional)
- fresh cilantro on top as garnish (optional)
Instructions:
Step 1: In a large Soup pot put your olive oil, chopped onion, carrots, celery, and garlic, and on medium heat sauté until onions become translucent.
Step 2: Add your 12 cups of chicken broth to the pot and turn the heat up to max until it starts to boil.
My Little Chopping Onion Tip: With the onion still held together by the root end, cut slices across it, then turn the onion 90 degrees and cut across it again. Then cut all of the pieces off to create the chopped onion chunks. Super easy and quick!! Less time for the onion to make you cry too!!
Step 3: Add all the rest of the veggies (Chopped zucchini, mushrooms, cabbage, can of diced tomatoes, can of baby corn, bag of frozen okra, frozen peas) and diced chicken (optional) if you would like some extra protein in your soup. When it starts to boil the heat can be turned down to simmer.
Step 4: Add Seasonings (Worcestershire sauce, bay leaves, salt and pepper) and let simmer for about 2 hours (you can get away with simmering for less time, I just like to let the flavors mingle).
Step 5: Add lime juice when the soup is done cooking. .
Step 6: Serve it in a large bowl topped with cilantro and some extra lime juice (optional).
Step 7: Enjoy!!! And don’t feel bad about having seconds!!

This soup sounds so hearty! I can’t think of anything as healthy as a bowl of vegetable soup, especially if you make your own bone broth. Well, maybe a green salad, but that’s not nearly as nourishing on a cold winter day.
