In a large Soup pot put your olive oil, chopped onion, carrots, celery, and garlic, and on medium heat sauté until onions become translucent.
Add your 12 cups of chicken broth to the pot and turn the heat up to max until it starts to boil. When it starts to boil the heat can be turned down to simmer.
Add all the rest of the Veggies (Chopped zucchini, mushrooms, cabbage, can of diced tomatoes, can of baby corn, bag of frozen okra, frozen peas) and diced chicken (optional) if you would like some extra protein in your soup.
Add Seasonings (Worcestershire sauce, bay leaves, salt and pepper) and let simmer for about 2 hours.
Add Lime juice when the soup has finished cooking.
Serve it in a large bowl topped with cilantro and a squeeze of extra lime juice (if you love lime as much as I do).
Step 7: Enjoy!!! And don't feel bad about having seconds!!
