Everyone loves a great Carrot side dish… am I right? Well my Shawnikins family does it right, because on most holidays this Nifty Carrot side dish is on the table, and every time it is, it is demolished!
Now I know that this is a recipe that Shawnikins mom found in a recipe book (The Best of Bridge Cook Book) years ago, but we like to make it saucier! We all agree that creamy horseradish sauce needs to cover every inch of the carrots. So today I bring you the extra saucy version of the Nifty Carrots! And they are divine!
INGREDIENTS TO MAKE SOME SAUCY NIFTY CARROTS:
- About 10 large Carrots
SAUCE:
- 3/4 Cup Reserved Carrot water
- 3/4 Cup Mayonnase
- 3/4 Cup Sour Cream
- 1/2 Cup Onion – finely chopped
- 3 Tablespoons Horseradish
- Salt and Pepper to Taste
TOPING:
- 3 Tablespoons Butter
- 1 Cup Bread Crumbs
METHOD TO MAKE SAUCY NIFTY CARROTS:
Step #1: Pre heat the oven to 375 degrees.
Step #2: Peel and slice Carrots, then cook them in a pot of water until tender crisp. After the carrots are cooked remove 3/4 cup of the hot carrot water for the sauce, then strain the rest of the carrots, and place the cooked carrots in a casserole dish.
NOTE: After cooking carrots DON’T FORGET to save 3/4 Cup of the hot Carrot Water for the Sauce!! This may or may not have happened to me a couple times, and it’s sad! You can use hot water instead, but it’s not as yummy as carrot water.
Step #3: Mix all of the Sauce ingredients together and pour over the carrots in the casserole dish (I used this Quiche Dish because its a bit more cute!).
Step #4: Mix melted butter and breadcrumbs together, and sprinkle over the top of the saucy carrots.

Step #5: Bake in the oven for 30 minutes! And ENJOY!!

Saucy Nifty Carrots
Ingredients
- 10 Carrots peeled and sliced
Sauce
- 3/4 Cup Reserved Carrot Water
- 3/4 Cup Mayonnaise

- 1 Cup Breadcrumbs
- 3 Tablespoons Butter melted
Instructions

Preheat oven to 375 degrees.

Peel and slice Carrots, and cook in a pot of water until tender crisp. (NOTE: Before draining water from carrots remember to save 3/4 cup of hot carrot water for your Sauce)

Place drained cook carrots in a casserole dish
